DOSA
To prepare dosa, you will need the following ingredients:
2 cups of rice
1 cup of urad dal (split black lentils)
1/2 tsp of methi seeds (fenugreek seeds)
Salt to taste
Oil for cooking
Instructions:
Rinse the rice and urad dal in several changes of water until the water runs clear. Soak the rice and dal separately in water for at least 4 hours or overnight.
Drain the water from the soaked dal and grind it with methi seeds and enough water to make a smooth and fluffy batter.

Mix the two batters together and add salt to taste. Cover and let it ferment for 8-10 hours or overnight.
Heat a non-stick tawa (griddle) over medium heat. Pour a ladleful of batter in the center of the tawa and spread it outwards in a circular motion.
Drizzle some oil around the edges of the dosa and cook for about 2 minutes or until the bottom is golden brown.
Carefully flip the dosa over and cook for another minute or until the other side is golden brown.
Serve the dosa hot with chutney or sambar.
