PEANUT CHUTNEY
To prepare peanut chutney, you will need:
1 cup roasted peanuts
2-3 cloves of garlic
2-3 green chilies
1/4 cup fresh grated coconut (optional)
Salt to taste
1 tsp oil
1/4 tsp mustard seeds
1/4 tsp cumin seeds
A pinch of asafoetida (optional)
A few curry leaves (optional)
Water as needed
Instructions:
In a pan, heat oil and add mustard seeds, cumin seeds and asafoetida.
Once the seeds start to splutter, add curry leaves and sauté for a few seconds.
Add garlic and green chilies and sauté until they turn golden brown.
Add the roasted peanuts, fresh grated coconut (if using) and salt to the pan and sauté for a few minutes.
Allow the mixture to cool.
Once cooled, grind the mixture to a fine paste using a mixer or mortar and pestle, adding water as needed to achieve the desired consistency.
Your peanut chutney is now ready to be served. Enjoy!
